A driven 16-year-old and her mom are opening Sugar and Sage Bakery on Lovers Lane, with a menu of sweet and savory treats. Pastry chef Jill Bates is in charge of the recipes, according to a Dallas Morning News article. They say,
“You could say 16-year-old Ashley Sage Weinstein is a little sweet, a little salty.
She’s a driven sophomore at Greenhill School in Addison who wants to study neuroscience in college. But before she does that, she’ll open a bakery with her mom, Alison Weinstein, on Lovers Lane in University Park.
Sugar and Sage Bakery is expected to open April 29, 2023, with a menu of croissants, doughnuts, cupcakes and focaccia. Espressos will be made from an Australian Aremde coffee machine, and coffee beans come from Dallas shop Noble Coyote. Each sweet treat was tasted and approved by Ashley and her friends. They aren’t her recipes, though: While Ashley “came into the world loving to bake,” her mom says, they hired serious talent with Jill Bates, who was the executive pastry chef at Fearing’s in Dallas from 2007 to 2019.”
The bakery will offer a variety of sweet and savory items, including brioche, danishes, brownies, and doughnuts. They’ll also have baguettes, pretzels, and a coffee program, according to a CultureMap Dallas article which includes,
Cinnamon ‘Cruffin’ Brioche Feuilleté – A rich and flaky laminated brioche accented with cinnamon sugar.
Apricot Verbena Danish – A spin on the classic breakfast pastry, paring sweet apricot with vanilla cream and fragrant lemon verbena.
Caramel Blondie – A thick, dense bar cookie with the sweet aroma of vanilla and brown sugar, topped with caramel.
Brownie – A classic brownie owing its flavor and texture to an intense dark chocolate.
Raspberry & Cream Glazed Doughnut – Golden yeast-raised doughnuts, dipped in a fruity and floral raspberry-rose glaze.
Mushroom Focaccia – A warm pillowy house-made focaccia layered with ricotta and mushrooms sauteed with garlic and herbs and topped with melted gouda.
They’ll also be doing a few breads including baguettes, whole wheat bread, pretzels, and will have a coffee program, as well.”
Sugar and Sage is a new trendy spot for professionals and students located near Highland Park High School, designed for working and studying.
